Cheese is a tasty and he althy product. It is a source of calcium and beneficial trace elements. But the quality of the store product raises many questions. And the prices for cheeses are not the most attractive. So I decided to make my own cheese. Milk, sour cream and lemon juice are all I need to make delicious homemade cheese.
What you need
- 2L milk;
- 5 tablespoons of heavy sour cream;
- 4 tablespoons of lemon juice;
- glass of water;
- a teaspoon of s alt.
Cooking
- Pour milk into a saucepan and heat over medium heat.
- Once the milk is warm, add sour cream and mix well with a wooden spoon.
- When the fermentation process begins (the milk starts to break down into cheese and whey), you need to add lemon juice and mix everything well again. Cook for another minute.
- Gauze should be folded into 6 layers, wetted and squeezed well, spread in a colander.
- In the resulting "sieve" you need to pour the milk mass. Be sure to place some sort of whey collection container under the colander.
- When the whey drains, you need to wrap the cheese in a gauze bag and put its ends under pressure. Cheese should be in this suspended state for at least an hour.
- Pour s alt into the water and heat on the burner until the latter is completely dissolved.
- Cut the pressed feta cheese into cubes or thick slices, put in some container and pour over the brine.
- You can start tasting in half an hour.
