Some time ago, I just boiled corn in a pot, and then nibbled it, sprinkled with s alt. But then I found out that you can cook a very tasty soup from it in the shortest possible time. So I did everything exactly as the recipe said. The result exceeded all my expectations, so now I'm really looking forward to the summer to make this amazing vegetarian cream soup again.

To create a soup, we need ingredients such as:

  • 8-9 ears of corn;
  • a tablespoon of refined vegetable oil;
  • big onion;
  • 5 garlic cloves;
  • a teaspoon of dried thyme;
  • half teaspoon ground black pepper;
  • a pinch of chili;
  • 3 cups vegetable broth;
  • 400 ml coconut milk (can be replaced with regular milk);
  • tablespoon of vinegar;
  • a few stalks of parsley.

First of all, we separate the corn kernels and put them in a thick-bottomed pan to fry in vegetable oil.

After a minute, add the chopped onion there, and cook everything together over medium heat for eight minutes, stirring all the time. Next, add garlic with spices to the container, mix the mixture and continue to fry it for another minute.

After that, pour in the vegetable broth, stir the soup, cover the pot with a lid, increase the heat slightly so that the liquid boils, reduce the heat again and leave the dish to cook for 10 minutes.

Next, cool the corn mass, and then grind it with a mixer so that it turns into a puree.

At the end, we take a couple of tablespoons from the milk, and pour the remaining liquid together with vinegar into a puree, which we beat a little more, and pour into plates. Before serving, pour over the dish with the remaining milk and sprinkle with chopped herbs and a few corn kernels.
